This is a great recipe for Coulee View ground chicken or turkey when you find that in your meat CSA share.
Dipping Sauce: 1/4 cup lemon juice
3 Tablespoons fish sauce
1 Tablespoon snipped cilantro
2 teaspoons sugar
1 teaspoon soy sauce
1/4 to 1/2 teaspoon crushed red pepper
1/2 teaspoon roasted sesame oil
Poultry Mixture: 1 beaten egg
1/2 cup coarsely chopped water chestnuts
1/3 cup dine dry bread crumbs
1 green onion, finely chopped (2 Tablespoons)
1 Tablespoon soy sauce
1 Tablespoon lemon juice
2 teaspoons grated ginger root
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon chili oil or a dash of ground red pepper
1-1/2 pounds ground raw Coulee View Family ground turkey or chicken
12 small savoy cabbage leaves or small leaf lettuce leaves
For Dipping Sauce: In a small mixing bowl stir together all of the dipping sauce ingredients. Set aside.
To Prepare the Poultry Mixture: In a large mixing bowl combine all poultry mixture ingredients except the meat and cabbage. Add ground turkey and mix well. Shape into twelve 2":x1.5"x0.75" loaves.
Cook by the Indirect Grill Method: In a covered grill arrange preheated coals around trip pan. Test for medium heat above the pan. Place loaves on the grill rack over the drip pan. Cover and grill for 18 to 20 minutes or till the juices run clear. Turn the meat once about half way through.
To Serve: Wrap each loaf in a savoy cabbage leave or lettuce leaf. Serve with dipping sauce.
