Spicy Corn Stew with Andouille

Here is a recipe that uses Andouille sausage.

Ingredients:
  • 1 green bell pepper, finely chopped
  • 1 white onion, finely chopped
  • 1-1 cloves garlic, minced
  • 1/4 cup olive or canola oil
  • 2 links of Coulee View Family Farm Andouille sausage, sliced
  • 1 can Rotel tomatoes
  • 4 cans cream corn
  • 2 cups cooked rice
Saute the bell pepper, onions and garlic in a 2-quart pot with the oil. Cook for 20 minutes on medium heat, then add the sausage. Cook for 10 minutes. Add Rotel tomatoes and cook for 5 minutes. Then add cream corn and cook all of the ingredients for 20 minutes. Serve over rice.

Serves 4 to 6
