July 2010 CSA Shares

The July CSA Drop Off for the Madison/Hartland route will be Thursday, July 22nd. The location and times are as follows:
6pm in Boscobel
6:45 in Fitchburg at the PDQ on PD just east of hwy 18/15
7:15 in the Vilas Park area
8pm in Deerfield
9pm in Hartland


We will have chicken again, so right now it looks like the July CSA shares should contain the following:

Quarter Share:
> One Whole Pasture Raised Chicken
> One package of pork brats or chicken brats (choice)
> One package of pork breakfast rope sausage or links

Half Share:
> One Whole Pasture Raised Chicken
> One package of msg free, nitrate free chicken brats
> One or two packages of smoked chicken dark quarters
> One package of pork brats
> One package of pork breakfast rope sausage or links
> One package of smoked chops
> One package of ground seasoned pork

Full Share:
> One Whole Pasture Raised Slow Growth Chicken (Red Broiler)
> One Whole Pasture Raised Cornish Cross Chicken (White Broiler)
> One whole roasting duck (optional - customer can opt out of this and we will substitute)
> One package of msg free, nitrate free chicken brats
> One or two packages of smoked chicken dark quarters
> One or two packages of regular chicken croquettes
> One package of pork brats
> One package of pork breakfast rope sausage or links
> One package of smoked chops
> One package of pork soup bones
> One pork shoulder roast
> One or two packages of ground seasoned pork

  1. I smoked the whole pasture raised chicken using this recipe:

    The rub described in the recipe was enough for two whole chickens.

    I used hickory wood chips as this was all I could find. I also tried to cook at a lower temperature (below 200) because I was smoking pork ribs at the same time.

    My guests thought the chicken turned out great, but I think I cooked it a little too long or too hot. If anyone gets these chickens in their CSA, I think this recipe is worth the time and effort to make something special. I'll be trying it again with two more chickens next weekend.
